Description

Ingredients

  • 2 cups long-grain white rice
  • 1 large onion, thinly sliced
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 4 cups beef broth
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 cup shredded Gruyère cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet, melt the butter and olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, until they are caramelized and golden brown, about 15-20 minutes.
  2. While the onions are cooking, rinse the rice under cold water until the water runs clear.
  3. Once the onions are caramelized, add the rinsed rice to the skillet and stir to combine. Cook for 2-3 minutes until the rice is slightly toasted.
  4. Pour in the beef broth, add garlic powder, thyme, salt, and pepper. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender and the liquid is absorbed.
  5. Remove the skillet from heat and stir in the shredded Gruyère cheese until melted and well combined.
  6. Fluff the rice with a fork and garnish with chopped parsley before serving.
