Description
A delicious and refreshing Fresh Strawberry Pie made with ripe strawberries and a buttery crust.
Ingredients
- 2 cups fresh strawberries, hulled and halved
- 1 cup granulated sugar
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1/4 teaspoon salt
- 1 pre-baked 9-inch pie crust
- 1 tablespoon butter, cut into small pieces
- 1/4 cup whipped cream (optional, for serving)
Instructions
- Preheat your oven to 350°F.
- In a medium saucepan, combine 1 cup of the halved strawberries, sugar, cornstarch, lemon juice, and salt. Cook over medium heat, stirring constantly until the mixture begins to thicken and bubble, about 5-7 minutes.
- Remove the saucepan from heat and gently fold in the remaining strawberries.
- Pour the strawberry mixture into the pre-baked pie crust, spreading it evenly. Dot the top with small pieces of butter.
- Bake the pie in the preheated oven for 10-15 minutes, until the filling is bubbly.
- Remove the pie from the oven and let it cool to room temperature, then refrigerate for at least 2 hours before serving.
- Serve slices with a dollop of whipped cream if desired.
Notes
- For a richer flavor, add a teaspoon of vanilla extract to the filling mixture.
- You can substitute half of the strawberries with blueberries or raspberries for a mixed berry pie.
