  • 2 cups fresh strawberries, hulled and halved
  • 1 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice

  • 1 pre-baked 9-inch pie crust
  • 1 tablespoon butter, cut into small pieces
  • 1/4 cup whipped cream (optional, for serving)

Instructions

  1. Preheat your oven to 350°F.
  2. In a medium saucepan, combine 1 cup of the halved strawberries, sugar, cornstarch, lemon juice, and salt. Cook over medium heat, stirring constantly until the mixture begins to thicken and bubble, about 5-7 minutes.
  3. Remove the saucepan from heat and gently fold in the remaining strawberries.
  4. Pour the strawberry mixture into the pre-baked pie crust, spreading it evenly. Dot the top with small pieces of butter.
  5. Bake the pie in the preheated oven for 10-15 minutes, until the filling is bubbly.
  6. Remove the pie from the oven and let it cool to room temperature, then refrigerate for at least 2 hours before serving.
  7. Serve slices with a dollop of whipped cream if desired.
