  • ½ teaspoon baking soda
  • ½ teaspoon kosher salt

Velvety Vanilla Frosting

  • 23 tablespoons heavy whipping cream (adjust for desired consistency)
  • Pinch of salt

Festive Toppings

  • Easter-themed pastel sprinkles
  • Optional: 1-2 drops pastel food coloring (pink, yellow, or blue)

Instructions

1. Prepare the Blondie Batter

  • Preheat oven to 350°F (175°C).
  • Line a 9×13-inch baking pan with parchment paper or lightly grease it.
  • In a large mixing bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.
  • Beat in eggs, egg yolk, and vanilla extract, mixing until smooth.
  • In a separate bowl, whisk together flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients, stirring until just combined.

2. Bake to Golden Perfection

  • Spread the batter evenly into the prepared baking pan.
  • Bake for 35-40 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out with a few moist crumbs.
  • Allow blondies to cool completely before frosting.

3. Make the Vanilla Frosting

  • In a mixing bowl, beat butter until creamy.
  • Gradually add powdered sugar, beating until smooth.
  • Mix in vanilla extract and heavy cream, one tablespoon at a time, until you reach a smooth, spreadable consistency.
  • Add food coloring if desired for a festive pastel frosting.

4. Decorate and Serve

  • Spread or pipe frosting evenly over the cooled blondies.
  • Sprinkle Easter-themed sprinkles on top.
  • Allow frosting to set before slicing into squares.
