Description
Fruit and Pancake Skewers are a fun and colorful breakfast option that combines fluffy pancakes with fresh fruit on skewers.
Ingredients
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1 large egg
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
- 1 cup mixed fresh fruit (such as strawberries, blueberries, banana slices, and kiwi)
- Wooden skewers
Instructions
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In another bowl, combine the milk, egg, melted butter, and vanilla extract. Mix well.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
- Preheat a non-stick skillet or griddle over medium heat. Lightly grease with cooking spray or a little butter.
- Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes. Flip and cook for another 1-2 minutes until golden brown.
- Remove pancakes from the skillet and let them cool slightly. Repeat with the remaining batter.
- Once pancakes are cool, cut them into quarters.
- Assemble the skewers by alternating pieces of pancake and fresh fruit. Aim for a colorful mix!
- Serve immediately or refrigerate for up to 1 hour before serving.
Notes
- For a fun twist, add a drizzle of maple syrup or honey over the skewers just before serving.
- Experiment with different fruits based on the season, such as peaches in summer or apples in fall.
