Description

Fruit and Pancake Skewers are a fun and colorful breakfast option that combines fluffy pancakes with fresh fruit on skewers.

Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1 cup mixed fresh fruit (such as strawberries, blueberries, banana slices, and kiwi)
  • Wooden skewers

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In another bowl, combine the milk, egg, melted butter, and vanilla extract. Mix well.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
  4. Preheat a non-stick skillet or griddle over medium heat. Lightly grease with cooking spray or a little butter.
  5. Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes. Flip and cook for another 1-2 minutes until golden brown.
  6. Remove pancakes from the skillet and let them cool slightly. Repeat with the remaining batter.
  7. Once pancakes are cool, cut them into quarters.
  8. Assemble the skewers by alternating pieces of pancake and fresh fruit. Aim for a colorful mix!
  9. Serve immediately or refrigerate for up to 1 hour before serving.

Notes

  • For a fun twist, add a drizzle of maple syrup or honey over the skewers just before serving.
  • Experiment with different fruits based on the season, such as peaches in summer or apples in fall.
