Description

A delicious and easy recipe for Fruit and Yogurt Parfaits, perfect for a healthy breakfast or snack.

Ingredients

  • 2 cups plain Greek yogurt
  • 2 tablespoons honey (or to taste)
  • 1 teaspoon vanilla extract
  • 2 cups granola
  • 2 cups mixed berries (strawberries, blueberries, raspberries)
  • 1 banana, sliced
  • Fresh mint leaves for garnish (optional)

Instructions

  1. In a medium bowl, mix the Greek yogurt, honey, and vanilla extract until well combined. Adjust sweetness by adding more honey if desired.
  2. In serving glasses or bowls, layer 1/4 cup of the yogurt mixture at the bottom.
  3. Add a layer of granola (about 2 tablespoons) on top of the yogurt.
  4. Add a layer of mixed berries (about 1/2 cup) over the granola.
  5. Repeat the layers until the glasses are filled, finishing with a layer of yogurt on top.
  6. Garnish with sliced banana and fresh mint leaves if using.
  7. Serve immediately or refrigerate for up to 1 hour before serving for a chilled treat.

Notes

  • For a tropical twist, substitute mixed berries with diced mango and pineapple.
  • Use dairy-free yogurt and granola for a vegan option, and sweeten with maple syrup instead of honey.
