Ingredients

For the Cookies:

  • 1 ½ cups all-purpose flour
  • ½ teaspoon baking soda

  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar

  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • ¾ cup Fruity Pebbles cereal

For the Glaze & Coating:

  • 1 cup powdered sugar
  • 23 tablespoons milk
  • ½ teaspoon vanilla extract
  • 1 cup Fruity Pebbles cereal (for coating)

Instructions

  • Preheat & Prep:

    • Preheat oven to 350°F (175°C).
    • Line baking sheets with parchment paper or silicone mats.
  • Mix Dry Ingredients:

    • In a bowl, whisk together flour, baking soda, and salt.
  • Cream Butter & Sugar:

    • In a large mixing bowl, beat butter and sugar together until light and fluffy (about 2 minutes).
    • Add egg, egg yolk, and vanilla extract, mixing until fully combined.
  • Combine Wet & Dry Ingredients:

    • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
    • Gently fold in ¾ cup Fruity Pebbles cereal for a colorful crunch.
  • Shape & Bake:

    • Roll the dough into 1 ½-inch balls and place on prepared baking sheets, leaving space between each cookie.
    • Bake for 10-12 minutes, or until the edges are lightly golden but the centers remain soft.
    • Let cool on the pan for 5 minutes before transferring to a wire rack.
  • Make the Glaze:

    • In a small bowl, whisk together powdered sugar, milk, and vanilla extract until smooth.
  • Dip & Coat:
