Ingredients
- 400 g potatoes, cut into bite-sized pieces
- Salt, to taste
- 300 g chicken breast, cut into bite-sized pieces
- Black pepper, to taste
- Sweet peppers, sliced (optional)
- Olive oil, for drizzling
- Vegetable oil, for frying
- 20 g butter + 20 g butter, divided
- 1 clove garlic, minced
- Parsley, chopped, for garnish
Instructions
1. Prepare the Potatoes:
- Place the potatoes in a pot of salted water.
- Bring to a boil, then simmer for 10–15 minutes until tender but firm. Drain and set aside.
2. Cook the Chicken:
- Season chicken breast pieces with salt and black pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Cook chicken pieces until golden brown and fully cooked (6–8 minutes). Set aside.
3. Fry the Potatoes:
- In the same skillet, add vegetable oil and 20 g of butter.
- Once butter melts, add the drained potatoes. Sauté for 5–7 minutes until golden and crispy.
4. Add the Garlic:
- Push the potatoes to one side of the skillet.
- Add the remaining 20 g of butter and minced garlic to the empty side.
- Cook garlic until fragrant (about 1 minute), then stir it into the potatoes.
5. Combine Chicken and Potatoes:
- Return the cooked chicken to the skillet.
- Add sweet peppers (if using). Stir to combine and cook for 2–3 minutes until heated through.
6. Garnish and Serve:
- Sprinkle chopped parsley over the dish.
- Serve immediately and enjoy!
