  • ½ cup sun-dried tomatoes, chopped
  • 2 cups chicken stock
  • ¼ teaspoon salt
  • 1 cup fresh spinach, chopped
  • ½ cup artichoke hearts, chopped
  • ½ cup heavy cream

Instructions

Step 1: Sear the Shrimp

  1. In a large skillet over medium-high heat, heat olive oil.
  2. Season shrimp with smoked paprika, Italian seasoning, salt, and black pepper.
  3. Add shrimp and minced garlic, cooking for 2 minutes per side until shrimp turn pink and opaque.
  4. Remove shrimp from the skillet and set aside.

Step 2: Toast the Orzo

  1. In the same skillet, add 1 tablespoon olive oil and chopped sun-dried tomatoes.
  2. Stir in uncooked orzo and toast for about 2 minutes, stirring frequently.

Step 3: Cook the Orzo

  1. Pour in chicken stock and add salt.
  2. Bring to a boil, then reduce to a simmer.
  3. Cook for 5-10 minutes, stirring occasionally, until the orzo absorbs most of the liquid.

Step 4: Add the Vegetables and Cream

  1. Stir in chopped spinach, artichoke hearts, and heavy cream.
