Ingredients

  • 1 lb whole mushrooms, cleaned
  • 3 tablespoons oil
  • Garlic salt and pepper, to taste
  • ½ cup unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon fresh thyme
  • 1 tablespoon lemon juice
  • 2 New York Strip Steaks
  • Salt and pepper, to season
  • For Compound Butter:
    • 1 cube butter, softened
    • 3 teaspoons garlic, minced
    • 1 tablespoon fresh thyme, minced (plus extra for garnish)

Instructions

  • Prepare the Mushrooms
    Preheat your oven to 400°F (200°C). Toss the cleaned mushrooms with oil, garlic salt, and pepper in an ovenproof skillet. Roast in the oven for 25 minutes, stirring halfway through, until golden brown.
  • Make the Garlic Butter Sauce
    While the mushrooms are roasting, melt butter in a saucepan over medium heat. Let it turn golden brown and develop a nutty aroma. Remove from heat and stir in minced garlic, fresh thyme, and lemon juice. Set aside.
  • Combine Mushrooms and Garlic Butter
    Once the mushrooms are done, drain any excess oil. Pour the garlic butter sauce over the mushrooms and toss to coat. Adjust seasoning with garlic salt and pepper to taste.
  • Cook the Steaks
    Generously season both sides of the New York Strip steaks with salt and pepper. Grill over medium-high heat for 3-4 minutes per side, until they reach your preferred doneness (use a meat thermometer for accuracy). Let the steaks rest for 5 minutes before serving.
  • Finish with Compound Butter
