Ingredients

For the Steak Bites:

  • 1.5 lbs (680g) sirloin steak, cut into 1-inch cubes
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter, divided
  • 6 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon fresh rosemary leaves, chopped
  • 1 teaspoon fresh parsley, chopped

For the Parmesan Cream Sauce:

  • 1 tablespoon butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • Salt and pepper, to taste
  • 1 teaspoon Italian seasoning

Instructions

1. Prepare the Steak Bites

  • Season the cubed sirloin steak generously with salt and pepper on all sides.
  • Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
  • Add the steak cubes to the skillet in a single layer (cook in batches if needed) and sear for 2–3 minutes on each side, or until golden brown.
  • Remove the steak bites from the skillet and set aside.

2. Make the Garlic Herb Butter

  • In the same skillet, reduce the heat to medium and melt 2 tablespoons of butter.
  • Stir in the minced garlic, thyme, rosemary, and parsley. Sauté for 1 minute until fragrant.
  • Return the steak bites to the skillet and toss them in the garlic herb butter until evenly coated. Remove from heat and keep warm.

3. Prepare the Parmesan Cream Sauce

  • In a separate saucepan, melt 1 tablespoon of butter over medium heat.
  • Add the minced garlic and sauté for 1 minute.
  • Pour in the heavy cream and stir. Bring the mixture to a gentle simmer.
  • Whisk in the Parmesan cheese until fully melted and smooth.
  • Stir in the Italian seasoning, then adjust with salt and pepper to taste. Let the sauce thicken slightly, about 3–5 minutes.

4. Serve

  • Arrange the steak bites on a plate or serving dish and drizzle generously with the Parmesan cream sauce.
  • Garnish with extra parsley if desired and serve immediately with your favorite sides.

Notes

  • Cooking in Batches: To get a perfect sear, don’t overcrowd the skillet. Sear the steak bites in small batches if necessary.
  • Thicker Sauce: For a creamier consistency, let the Parmesan cream sauce simmer longer, or add a teaspoon of cornstarch mixed with water.
  • Fresh Parmesan: Use freshly grated Parmesan for a smoother, more flavorful sauce.
  • Alternative Cuts: Ribeye or tenderloin also work well in this recipe if sirloin is unavailable.
