Ingredients
- 120 g (4.2 ounces) of dates
- 200 g (7 ounces) of cottage cheese
- 20 g (1/4 cup) of unsweetened cocoa powder
- Vanilla extract (to taste)
- 2 tablespoons of butter or coconut oil
- 120 g (4.2 ounces) of chocolate
- 2 tablespoons of vegetable oil
Instructions
1. Prepare the Dates
- Soak the dates in boiling water for 15 minutes to soften.
- Drain the dates and remove any pits.
- Blend the softened dates into a smooth paste using a food processor or blender.
2. Make the Cottage Cheese Mixture
- In a mixing bowl, combine the cottage cheese, unsweetened cocoa powder, and vanilla extract.
- Blend the mixture until smooth and uniform.
- Add the date paste to the mixture and blend again. Adjust the flavor with more vanilla if desired.
3. Shape the Curds
- Take small portions of the mixture and form them into bars or balls.
- Arrange the curds on a parchment-lined tray.
4. Chill the Curds
- Refrigerate the curds for 30 minutes to help them firm up.
5. Melt the Chocolate
- Melt the chocolate in a double boiler or microwave in short intervals, stirring until smooth.
- Stir in the vegetable oil to achieve a shiny, smooth glaze.
6. Glaze the Curds
- Dip each chilled curd into the melted chocolate, ensuring they are fully coated.
- Place the glazed curds back on the parchment-lined tray.
7. Set the Glaze
- Refrigerate the curds for another 15–20 minutes until the chocolate hardens.
8. Serve and Store
- Serve chilled and enjoy!
