Ingredients

  • 120 g (4.2 ounces) of dates
  • 200 g (7 ounces) of cottage cheese
  • 20 g (1/4 cup) of unsweetened cocoa powder
  • Vanilla extract (to taste)
  • 2 tablespoons of butter or coconut oil
  • 120 g (4.2 ounces) of chocolate
  • 2 tablespoons of vegetable oil

Instructions

1. Prepare the Dates

  • Soak the dates in boiling water for 15 minutes to soften.
  • Drain the dates and remove any pits.
  • Blend the softened dates into a smooth paste using a food processor or blender.

2. Make the Cottage Cheese Mixture

  • In a mixing bowl, combine the cottage cheese, unsweetened cocoa powder, and vanilla extract.
  • Blend the mixture until smooth and uniform.
  • Add the date paste to the mixture and blend again. Adjust the flavor with more vanilla if desired.

3. Shape the Curds

  • Take small portions of the mixture and form them into bars or balls.
  • Arrange the curds on a parchment-lined tray.

4. Chill the Curds

  • Refrigerate the curds for 30 minutes to help them firm up.

5. Melt the Chocolate

  • Melt the chocolate in a double boiler or microwave in short intervals, stirring until smooth.
  • Stir in the vegetable oil to achieve a shiny, smooth glaze.

6. Glaze the Curds

  • Dip each chilled curd into the melted chocolate, ensuring they are fully coated.
  • Place the glazed curds back on the parchment-lined tray.

7. Set the Glaze

  • Refrigerate the curds for another 15–20 minutes until the chocolate hardens.

8. Serve and Store

  • Serve chilled and enjoy!
