Ingredients

  • 2 tablespoons olive oil
  • 4 boneless pork chops (about 1 inch thick)
  • Salt and pepper, to taste
  • 1/2 cup balsamic vinegar
  • 1/4 cup honey
  • 2 cloves garlic, minced
  • 1 teaspoon Dijon mustard
  • 1 teaspoon dried thyme
  • 1/2 teaspoon red pepper flakes (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat. Season the pork chops with salt and pepper on both sides. Once the oil is hot, add the pork chops to the skillet and sear for about 4-5 minutes on each side, or until they are golden brown and cooked through (internal temperature should reach 145°F). Remove the pork chops from the skillet and set aside.
  2. In the same skillet, add the balsamic vinegar, honey, minced garlic, Dijon mustard, dried thyme, and red pepper flakes (if using). Stir to combine and bring the mixture to a simmer. Cook for about 3-4 minutes, or until the sauce has thickened slightly.
  3. Return the pork chops to the skillet, spooning the glaze over them. Cook for an additional 2-3 minutes, allowing the pork chops to absorb the flavors of the glaze.
  4. Remove from heat and let the pork chops rest for a few minutes. Garnish with chopped fresh parsley before serving.
