  • 5 g instant yeast (Rapid Rise or Bread Machine)
  • 190 g water, warmed to 120–130°F
  • 113 g butter, softened

Tomato Sauce:

  • 28 ounces crushed tomatoes, drained
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon kosher salt
  • ⅛ teaspoon black pepper

Toppings:

  • 4 ounces provolone cheese, sliced or shredded
  • 12 ounces mozzarella cheese, shredded
  • 2 ounces parmesan cheese, divided
  • Desired toppings: Italian sausage, pepperoni, or vegetables

Instructions

Step 1: Prepare the Dough

  1. In a large mixing bowl, whisk together gluten-free flour, cornmeal, kosher salt, and yeast.
  2. Gradually add warm water while mixing on medium speed until smooth.
  3. Add softened butter and mix for 2 more minutes, scraping the sides as needed.
  4. Transfer dough to a greased bowl, cover, and let rise for 1 hour. For easier handling, refrigerate for at least 1 hour or overnight.

Step 2: Make the Tomato Sauce

  1. Drain crushed tomatoes in a fine mesh strainer, pressing gently to remove excess liquid.
  2. Mix strained tomatoes with garlic, Italian seasoning, salt, and pepper in a bowl.

Step 3: Preheat the Oven

  • Preheat your oven to 425°F.

Step 4: Prepare the Pan

  1. Generously grease a deep-dish pizza pan with softened butter.
  2. Sprinkle a light layer of cornmeal and a small amount of parmesan cheese.

Step 5: Shape the Dough

  1. Roll out dough on parchment paper, making it 2 inches larger than your pan.
  2. Transfer to the pan, pressing evenly across the bottom and up the sides. Trim any excess.

Step 6: Layer the Cheese

  1. Add a layer of provolone cheese slices.
  2. Top with shredded mozzarella and half of the remaining parmesan cheese.

Step 7: Add Toppings and Sauce

  1. Layer desired toppings such as sausage or vegetables.
  2. Spread tomato sauce evenly over the toppings and finish with parmesan cheese.

Step 8: Bake

  1. Bake in the oven for 40–60 minutes until the crust is golden and cheese is bubbly.
  2. Ensure the internal temperature reaches 190°F.

Step 9: Cool and Serve

  1. Let the pizza cool for 10 minutes.
  2. Sprinkle with additional parmesan, slice, and serve hot.
