Description

Grandma’s Ground Beef Casserole is a comforting, cheesy dish that brings together savory ground beef, creamy soups, and tender potatoes in one hearty bake. Perfect for family dinners or meal prepping, this nostalgic recipe will quickly become a go-to favorite in your home.

Ingredients

For the Casserole:

  • 11.5 lbs ground beef
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 can (10.5 oz) cream of cheddar cheese soup
  • 3 cups frozen potato cubes
  • 1 cup shredded cheddar cheese, divided
  • Salt and pepper, to taste

Instructions

  • Preheat the Oven:
    • Preheat your oven to 350°F (175°C).
    • Grease a 9×13-inch casserole dish with nonstick spray or butter.
  • Cook the Ground Beef:
    • Heat a skillet over medium heat.
    • Add the ground beef and cook, breaking it into crumbles, until fully browned.
    • Drain any excess fat and transfer the cooked beef to a large mixing bowl.
  • Combine the Ingredients:
    • Add the cream of mushroom soup, cream of cheddar cheese soup, frozen potato cubes, half of the shredded cheddar cheese, salt, and pepper to the bowl with the beef.
    • Stir well to ensure everything is evenly combined.
  • Assemble the Casserole:
    • Pour the beef and potato mixture into the greased casserole dish and spread it out evenly.
    • Sprinkle the remaining half cup of shredded cheddar cheese over the top.
  • Bake the Casserole:
    • Cover the dish with foil to prevent overbrowning.
    • Bake in the preheated oven for 30 minutes.
    • Remove the foil and bake for an additional 30 minutes, or until bubbly and golden on top.
  • Rest and Serve:
    • Allow the casserole to rest for about 5 minutes to set before slicing.
    • Serve hot and enjoy the creamy, cheesy goodness!

Notes

  • Use Quality Beef: Opt for ground beef with an 80/20 fat ratio for a perfect balance of flavor and tenderness.
  • Customize the Vegetables: Add frozen peas, carrots, or green beans for a boost of color and nutrition.
  • Double the Recipe: If feeding a crowd, easily double the recipe and bake in two dishes.
