Hello friends! Today, I’m excited to share an incredibly delicious and easy-to-make recipe: grated potato rolls filled with ground beef and peppers. Ingredients: 

  • 700 g (1 lb 8 oz) potatoes, grated 
  • 2 eggs 
  • 3 tablespoons wheat flour 
  • Parsley, chopped 
  • 1 onion, finely chopped 
  • 1 clove garlic, minced 
  • 1 pepper, finely chopped 
  • 300 g (11 oz) ground beef 
  • 2 tablespoons tomato puree 
  • Salt, to taste 
  • Pepper, to taste 
  • Paprika, to taste 
  • Cheese to taste (Scamorza or other) 
  • Oil for frying 

Instructions: 

  1. Prepare the Potatoes: 
  • Peel and grate the potatoes. Place the grated potatoes in a bowl of cold water and let them sit for 10 minutes to remove excess starch. 
  • Drain the potatoes and squeeze out any excess water using a clean kitchen towel. 
  1. Make the Potato Mixture: 
  • In a large mixing bowl, combine the grated potatoes, eggs, wheat flour, and chopped parsley. 
  • Stir until all the ingredients are fully integrated. 
  1. Prepare the Filling: 
  • In a large skillet, heat a bit of oil over medium heat. 
  • Add the finely chopped onion and garlic, and sauté until the onion becomes translucent. 
  • Place the ground beef in the skillet and cook until it turns brown. 
  • Stir in the finely chopped pepper and cook for another 5 minutes. 
  • Add the tomato puree, salt, pepper, and paprika. Mix well and let it cook for another 5 minutes until the flavors meld together. 
  • Take the filling off the heat and allow it to cool down a bit. 
  1. Assemble the Rolls: 
  • Take a handful of the potato mixture and flatten it into a patty in your hand. 
  • Place a spoonful of the beef and pepper filling in the center of the patty. 
  • Add a piece of cheese on top of the filling. 
  • Carefully roll the potato patty around the filling to form a cylindrical roll. Repeat with the remaining potato mixture and filling. 
  1. Fry the Rolls: 
  • Warm oil in a large skillet over medium heat. 
  • Fry the potato rolls until golden brown and crispy on all sides. This process should take approximately 5-7 minutes on each side. 
  • Remove the rolls from the pan and drain on paper towels to remove any excess oil. 
  1. Serve: 
  • Serve the grated potato rolls warm, with your favorite dipping sauce or as is. Enjoy!
