Ingredients
- 1 cup long-grain rice (such as basmati or jasmine)
- 2 cups chicken or vegetable broth
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- Zest of 1 lemon
- Juice of 1 lemon
- 1 teaspoon dried oregano
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Sauté the Aromatics – Heat olive oil in a pan over medium heat. Add chopped onion and cook until soft and translucent (about 2-3 minutes). Stir in the minced garlic and sauté for another 30 seconds until fragrant.
- Toast the Rice – Add the rice to the pan and stir for 1-2 minutes until slightly toasted and coated with oil.
- Simmer with Flavor – Pour in the broth, lemon zest, lemon juice, dried oregano, salt, and black pepper. Stir well, bring to a boil, then reduce heat to low. Cover and let simmer for 15-18 minutes, or until the rice is tender and the liquid is absorbed.
- Let It Rest – Remove from heat and let the rice sit, covered, for 5 minutes. This helps ensure a fluffy texture.
