Description

A refreshing Green Bean and Feta Salad that combines tender green beans, juicy cherry tomatoes, and creamy feta cheese, perfect for a light meal or side dish.


Ingredients

  • 1 pound fresh green beans, trimmed
  • 1 cup cherry tomatoes, halved
  • 1/2 cup crumbled feta cheese
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Add the green beans and cook for 3-5 minutes until tender-crisp. Drain and immediately transfer to a bowl of ice water to stop the cooking process. Let cool for 5 minutes, then drain again and pat dry.
  2. In a large bowl, combine the cooled green beans, cherry tomatoes, feta cheese, and red onion.
  3. In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and pepper until well combined.
  4. Pour the dressing over the salad and toss gently to combine. Adjust seasoning with additional salt and pepper if needed.
  5. If using, sprinkle fresh parsley on top before serving.
