Ingredients
- 2 pounds boneless, skinless chicken breasts
- 1 cup salsa verde
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (15 ounces) corn, drained
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup fresh cilantro, chopped (optional for garnish)
- Juice of 1 lime
Instructions
- Place the chicken breasts in the bottom of the crockpot.
- Pour the salsa verde over the chicken, ensuring it is well coated.
- Add the black beans, corn, cumin, garlic powder, onion powder, salt, and black pepper to the crockpot.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and easily shreds with a fork.
- Once cooked, shred the chicken in the crockpot using two forks, mixing it with the salsa and other ingredients.
- Stir in the lime juice and garnish with fresh cilantro if desired.
- Serve warm with tortillas, rice, or over a salad.
Notes
- For a creamier texture, stir in 1/2 cup of cream cheese during the last 30 minutes of cooking.
- To make it spicier, add diced jalapeños or a splash of hot sauce to the crockpot before cooking.
