Description
A delicious Grilled Veggie Sandwich featuring fresh mozzarella and a tangy balsamic glaze, perfect for a healthy meal.
Ingredients
- 2 medium zucchini, sliced into 1/4-inch rounds
- 1 red bell pepper, sliced into strips
- 1 yellow bell pepper, sliced into strips
- 1 medium red onion, sliced into rings
- 2 tablespoons olive oil
- Salt and pepper to taste
- 4 slices of whole-grain bread
- 8 ounces fresh mozzarella cheese, sliced
- 1/4 cup balsamic glaze
- Fresh basil leaves for garnish (optional)
Instructions
- Preheat your grill or grill pan over medium heat.
- In a large bowl, combine the sliced zucchini, red and yellow bell peppers, and red onion. Drizzle with olive oil and season with salt and pepper. Toss to coat the vegetables evenly.
- Place the vegetables on the grill and cook for about 5-7 minutes, turning occasionally, until they are tender and have grill marks. Remove from the grill and set aside.
- While the vegetables are grilling, toast the slices of whole-grain bread on the grill until golden brown, about 2-3 minutes per side.
- Assemble the sandwiches by layering the grilled vegetables and slices of fresh mozzarella on two slices of toasted bread. Drizzle with balsamic glaze and top with the remaining slices of bread.
- If desired, return the assembled sandwiches to the grill for an additional 2-3 minutes per side to melt the cheese slightly.
- Remove from the grill, slice in half, and garnish with fresh basil leaves if using. Serve immediately.
Notes
- For a smoky flavor, add a pinch of smoked paprika to the vegetables before grilling.
- You can substitute the mozzarella with goat cheese or feta for a tangy twist.
- For added protein, consider adding grilled chicken or chickpeas to the sandwich.
