Description
A healthy and delicious Ground Turkey & Sweet Potato Bake that is easy to prepare and packed with nutrients.
Ingredients
- 2 tablespoons olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 pound ground turkey
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 medium sweet potatoes, peeled and diced (about 4 cups)
- 1 cup diced bell peppers (any color)
- 1 cup corn (fresh, frozen, or canned)
- 1 cup black beans, drained and rinsed
- 1 cup shredded cheddar cheese (optional)
- Fresh cilantro or parsley for garnish (optional)
Instructions
- Preheat the oven to 400°F.
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook for about 3-4 minutes until softened. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
- Add the ground turkey to the skillet and cook until browned, breaking it apart with a spoon, about 5-7 minutes. Stir in the smoked paprika, oregano, salt, and black pepper.
- In a large mixing bowl, combine the diced sweet potatoes, bell peppers, corn, and black beans. Add the cooked turkey mixture to the bowl and stir until well combined.
- Transfer the mixture to a greased 9×13 inch baking dish. Spread it evenly and top with shredded cheddar cheese if using.
- Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the sweet potatoes are tender and the cheese is bubbly and golden.
- Let the bake cool for a few minutes before serving. Garnish with fresh cilantro or parsley if desired.
Notes
- For added flavor, try mixing in some diced jalapeños or a splash of hot sauce for a spicy kick.
- You can substitute ground turkey with ground chicken or beef for a different taste.
- For a vegetarian option, replace the turkey with extra beans or lentils.
