Description

A healthy and delicious Ground Turkey & Sweet Potato Bake that is easy to prepare and packed with nutrients.


Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 pound ground turkey
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 medium sweet potatoes, peeled and diced (about 4 cups)
  • 1 cup diced bell peppers (any color)
  • 1 cup corn (fresh, frozen, or canned)
  • 1 cup black beans, drained and rinsed
  • 1 cup shredded cheddar cheese (optional)
  • Fresh cilantro or parsley for garnish (optional)

Instructions

  1. Preheat the oven to 400°F.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook for about 3-4 minutes until softened. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
  3. Add the ground turkey to the skillet and cook until browned, breaking it apart with a spoon, about 5-7 minutes. Stir in the smoked paprika, oregano, salt, and black pepper.
  4. In a large mixing bowl, combine the diced sweet potatoes, bell peppers, corn, and black beans. Add the cooked turkey mixture to the bowl and stir until well combined.
  5. Transfer the mixture to a greased 9×13 inch baking dish. Spread it evenly and top with shredded cheddar cheese if using.
  6. Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the sweet potatoes are tender and the cheese is bubbly and golden.
  7. Let the bake cool for a few minutes before serving. Garnish with fresh cilantro or parsley if desired.

Notes

  • For added flavor, try mixing in some diced jalapeños or a splash of hot sauce for a spicy kick.
  • You can substitute ground turkey with ground chicken or beef for a different taste.
