Ingredients
- 2 large eggs, lightly beaten
- 2 teaspoons finely minced bell pepper (any color)
- 2 teaspoons finely minced onion
- Salt and black pepper, to taste
- Olive oil cooking spray, as needed
- 2 teaspoons olive oil
- 2 (2-ounce) breakfast sausage patties
- 2 slices halloumi cheese
- 2 English muffins, toasted
Instructions
- Prepare the Egg Mixture
In a small bowl, whisk together the eggs, bell pepper, and onion. Season with a pinch of salt and black pepper. - Cook the Eggs
Heat a skillet over medium heat and coat it with olive oil cooking spray. Place two egg rings in the skillet and divide the egg mixture evenly between them. Cook for 8–10 minutes, until the eggs are set. Run a knife around the inside of the rings to release the eggs, flip, and cook for another 30 seconds. - Cook Sausage and Halloumi
Heat 2 teaspoons of olive oil in a separate skillet over medium heat. Cook the sausage patties for 3–4 minutes per side, until fully cooked. In the same skillet, cook the halloumi slices for 1–2 minutes per side, until lightly golden. - Assemble the Sandwiches
Place a slice of halloumi on the bottom half of a toasted English muffin. Layer with the cooked egg, sausage patty, and top half of the muffin. Repeat for the second sandwich. - Serve
Serve hot, seasoned with additional salt and black pepper if desired. Enjoy!
