  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 3 celery sticks, chopped
  • 4 garlic cloves, minced
  • 1 pound lean ground beef
  • 3 tablespoons all-purpose flour
  • 1 (6-ounce) can tomato paste
  • 4 cups beef broth (plus more as needed)
  • 1 tablespoon Worcestershire sauce
  • ½ teaspoon Italian seasoning
  • 2 russet potatoes, diced
  • 4 medium carrots, peeled and sliced
  • 1 cup frozen peas (optional)
  • Salt and pepper to taste

Optional Garnishes:

  • Fresh parsley, chopped
  • Crusty bread

Instructions

  • Prepare the Ingredients:
    • Chop the onion, celery, carrots, and potatoes into uniform pieces for even cooking. Mince the garlic cloves.
  • Sauté the Aromatics:
    • Heat olive oil in a large soup pot over medium-high heat.
    • Add the onion and celery, cooking for 5–7 minutes until softened.
    • Stir in the garlic and cook for 30 seconds, until fragrant.
  • Brown the Ground Beef:
    • Add the ground beef to the pot and cook, breaking it apart with a spoon, until browned (about 8 minutes).
    • Drain excess grease if needed.
  • Thicken the Stew:
    • Sprinkle the flour over the beef mixture and stir well.
    • Cook for 1–2 minutes to remove the raw flour taste.
  • Build the Flavor:
    • Stir in the tomato paste until evenly combined.
    • Add the beef broth, Worcestershire sauce, and Italian seasoning, stirring thoroughly.
  • Add Vegetables and Simmer:
    • Stir in the diced potatoes and sliced carrots.
    • Increase heat to high and bring the mixture to a boil.
    • Reduce to a rapid simmer, cover with the lid slightly ajar, and cook for 30 minutes, stirring occasionally.
  • Adjust Consistency:
    • Add more beef broth if the stew is too thick, or simmer uncovered for 10 minutes if you prefer a thicker consistency.
  • Finish the Stew:
    • Stir in the frozen peas during the last 5 minutes of cooking.
    • Season with salt and pepper to taste.
  • Serve:
    • Ladle the stew into bowls, garnish with fresh parsley, and serve with crusty bread for dipping.
