Ingredients

  • 2 slices of whole grain bread
  • 1 ripe avocado
  • 4 ounces Havarti cheese, sliced
  • 1 tablespoon mayonnaise
  • 1 teaspoon sriracha sauce (adjust to taste)
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/4 cup fresh spinach leaves
  • 1/2 medium tomato, sliced

Instructions

  1. In a small bowl, mix together the mayonnaise, sriracha sauce, garlic powder, salt, and pepper until well combined. Set aside.
  2. Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash the avocado with a fork until creamy, adding a pinch of salt and pepper to taste.
  3. Toast the slices of whole grain bread until golden brown.
  4. Spread a generous layer of the spicy mayo on one side of each slice of toasted bread.
  5. On one slice of bread, layer the mashed avocado, followed by the Havarti cheese, spinach leaves, and tomato slices.
  6. Top with the second slice of bread, mayo side down, and gently press together.
