Ingredients
- 1 pound macaroni pasta (feel free to use gluten-free pasta)
- 2 teaspoons sea salt (for boiling pasta)
- 1 ½ cups mayonnaise
- 1 tablespoon Dijon mustard (whole grain or smooth)
- 1 ½ tablespoons apple cider vinegar
- 1 tablespoon honey
- ½ teaspoon sea salt (for the dressing)
- Black pepper to taste
- 1 large carrot, shredded
- 3 ribs celery, finely sliced
- ½ medium red onion, chopped
- 1 cup chopped fresh parsley (optional, for garnish)
Instructions
- Cook the Pasta
Bring a large pot of water to a boil and add 2 teaspoons of sea salt. Cook the macaroni pasta according to the package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside to cool completely. - Prepare the Vegetables
While the pasta cools, shred the carrot, finely slice the celery, and chop the red onion. If you’re using fresh parsley, chop it into small pieces. - Make the Dressing
In a medium-sized mixing bowl, whisk together the mayonnaise, Dijon mustard, apple cider vinegar, honey, ½ teaspoon of sea salt, and black pepper. Adjust seasoning to taste if necessary. - Combine Pasta and Vegetables
In a large mixing bowl, combine the cooled pasta, shredded carrot, sliced celery, and chopped red onion. - Add the Dressing
Pour the dressing over the pasta and vegetables. Use tongs or a large spoon to toss everything together until the pasta is evenly coated in the creamy dressing. - Chill the Salad
Cover the salad and place it in the refrigerator for at least 1 hour to allow the flavors to meld together. For the best taste, let it chill for 2-3 hours. - Garnish and Serve
Before serving, sprinkle chopped fresh parsley on top for a colorful garnish. Serve chilled and enjoy alongside your favorite BBQ dishes, seafood, or grilled meats.
