Ingredients

For the Beef and Marinade:

  • Lean braising/casserole steak: 1 kg (2.2 lbs)
  • Fat-free Greek yogurt: 150 ml (3/4 cup)
  • Salt: 1 tsp
  • Ground cumin: 1 tsp
  • Ground coriander: 1 tsp
  • Turmeric: 1 tsp

For the Curry:

  • Frylight spray: 10 sprays
  • Large onion (chopped): 1
  • Ground coriander: 2 tbsp
  • Ground cumin: 1 ½ tbsp
  • Cardamom pods: 6
  • Turmeric: 1 tsp
  • Garam masala: 2 tsp
  • Freshly ground black pepper: ½ tsp
  • Dried whole chilies: 4
  • Fresh chili (finely chopped): 1 (red or green)
  • Garlic cloves (minced): 3
  • Ginger (minced): 1 thumb-sized piece
  • Tomato paste: 2 tbsp
  • Beef stock: 500 ml (2 cups + 1 tbsp)
  • Chopped tomatoes (canned): 400 g (14 oz)
  • Lemon juice: 1 tbsp

For Serving:

  • Fresh coriander (chopped): 1 small bunch
  • Red onion (diced): ¼
  • Basmati rice (or cauliflower rice): 75 g dry or 235 g cooked per person

Instructions

Step 1: Marinate the Beef

  1. Combine beef, yogurt, salt, cumin, coriander, and turmeric in a medium bowl.
  2. Massage the spices into the beef. Cover and refrigerate for 1–2 hours or overnight for best flavor.

Step 2: Seal the Beef

  1. Heat a large frying pan over high heat and spray with Frylight.
  2. Add the marinated beef and cook for 5–6 minutes, searing all sides.
  3. Drain excess liquid, leaving a small amount for flavor.

Step 3: Sauté the Onion

  1. Add chopped onion to the pan with the beef.
  2. Reduce heat to medium and cook for 4–5 minutes until softened.

Step 4: Add Spices

  1. Stir in coriander, cumin, cardamom pods, turmeric, garam masala, black pepper, and both chilies.
  2. Add minced garlic and ginger. Cook for 3–4 minutes until fragrant.

Step 5: Build the Curry Base

  1. Stir in tomato paste, beef stock, chopped tomatoes, and lemon juice.
  2. Bring the mixture to a simmer.

Step 6: Transfer to Slow Cooker

  1. Pour the curry mixture into a slow cooker.
  2. Cook on high for 3–4 hours or low for 5–6 hours, until the beef is tender.

Step 7: Adjust Seasoning

  1. Taste the curry and adjust seasoning with salt or pepper.
  2. Remove cardamom pods before serving.

Step 8: Serve and Enjoy

  1. Serve over basmati rice or cauliflower rice.
  2. Garnish with fresh coriander and diced red onion.
