Ingredients

For the Dough

  • 400 g flour
  • 1 tablespoon sugar
  • 1 1/2 teaspoons dry yeast
  • 1 egg
  • 200 ml milk
  • 40 g olive oil
  • 1 teaspoon salt

For the Filling

  • 150 g grated cheese
  • 150 g feta cheese
  • 1/2 red pepper, diced
  • 1/2 green pepper, diced
  • Fresh dill, chopped (to taste)

For the Topping

  • 1 egg yolk (for brushing)
  • Black cumin seeds (to taste)
  • Sesame seeds (to taste)

Instructions

1. Prepare the Dough

  • In a large bowl, combine the flour, sugar, and dry yeast. Mix well.
  • In another bowl, whisk together the egg, milk, olive oil, and salt until fully combined.
  • Gradually add the wet ingredients to the dry ingredients, mixing until a soft dough forms.
  • Knead the dough on a lightly floured surface for about 10 minutes, or until smooth and elastic.
  • Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until it doubles in size.

2. Prepare the Filling

  • In a bowl, combine grated cheese, feta cheese, diced red and green peppers, and fresh dill.
  • Mix well to evenly distribute the ingredients.

3. Assemble the Stuffed Bread

  • Preheat your oven to 180°C (356°F) and line a baking tray with parchment paper.
  • Punch down the risen dough and divide it into equal portions (about the size of a tennis ball).
  • Roll each portion into a ball, then flatten it into a disk.
  • Place a generous spoonful of filling in the center of each disk.
  • Fold the edges of the dough over the filling and pinch to seal, forming a stuffed ball.

4. Add the Toppings

  • Arrange the stuffed balls seam-side down on the prepared baking tray.
  • Beat the egg yolk in a small bowl and brush it over the tops of the dough balls.
  • Sprinkle black cumin seeds and sesame seeds over the tops for added flavor and texture.

5. Bake

  • Place the tray in the preheated oven and bake for 20-25 minutes, or until the bread is golden brown and fully cooked.

6. Serve

  • Remove the bread from the oven and let it cool slightly before serving.
  • Enjoy the stuffed bread warm and fresh!

Notes

  • Customize the Filling: Feel free to experiment with other fillings, such as spinach and ricotta, cooked mushrooms, or caramelized onions.
  • Storage: Store leftover bread in an airtight container at room temperature for up to 2 days or refrigerate for up to 5 days.
  • Reheating: Reheat in the oven to restore the bread’s soft texture and crisp exterior.
