Description
A comforting and hearty beef stew served in a warm bread bowl, perfect for cozy meals.
Ingredients
- 2 pounds beef chuck, cut into 1-inch cubes
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 carrots, sliced
- 3 stalks celery, sliced
- 4 cups beef broth
- 2 cups potatoes, diced
- 1 tablespoon tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 4 large round bread loaves (sourdough or French)
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot, heat the olive oil over medium-high heat. Add the beef cubes and brown them on all sides, about 5-7 minutes. Remove the beef and set aside.
- In the same pot, add the chopped onion and garlic. Sauté for 2-3 minutes until the onion is translucent.
- Add the carrots and celery to the pot and cook for another 5 minutes, stirring occasionally.
- Return the browned beef to the pot. Stir in the beef broth, diced potatoes, tomato paste, thyme, rosemary, salt, and pepper. Bring to a boil, then reduce heat to low. Cover and simmer for 1.5 to 2 hours, or until the beef is tender.
- While the stew is simmering, prepare the bread bowls. Preheat the oven to 350°F. Cut the tops off the bread loaves and hollow out the insides, leaving about a 1-inch thick wall. Save the bread you remove for later use or as croutons.
- Place the hollowed bread bowls on a baking sheet and bake for 10-15 minutes until they are slightly crispy.
- Once the stew is ready, ladle it into the warm bread bowls and garnish with chopped parsley. Serve immediately.
Notes
- For a thicker stew, mix 2 tablespoons of cornstarch with 2 tablespoons of cold water and stir it into the stew during the last 10 minutes of cooking.
- Add your favorite vegetables, such as peas or green beans, during the last 15 minutes of cooking for extra flavor and nutrition.
