Ingredients

  • 56 medium-sized potatoes, peeled and thinly sliced
  • 1 onion, cut into half-rings
  • 1 clove of garlic, finely chopped
  • 100150 grams (35 ounces) sausage, sliced
  • 6 eggs
  • 80 ml (3 fl oz) milk
  • Salt, to taste
  • Black pepper, to taste
  • Paprika, to taste
  • Vegetable oil for frying

Instructions

1. Prepare the Potatoes

  • Wash and peel the potatoes, then slice them thinly for even cooking.
  • Heat a generous amount of vegetable oil in a large skillet over medium heat.
  • Add the potato slices and fry, stirring occasionally, for 15-20 minutes until golden brown and tender.

2. Sauté the Aromatics

  • Add the sliced onion to the skillet with the potatoes. Cook for 3-4 minutes, or until the onions are soft and translucent.
  • Stir in the finely chopped garlic and cook for another 2 minutes. Make sure not to let the garlic burn.

3. Cook the Sausage

  • Push the potatoes and onions to one side of the skillet. Add the sliced sausage to the other side.
  • Cook for 3-4 minutes until the sausage is browned and slightly crispy. Mix everything together in the skillet.

4. Make the Egg Mixture

  • In a medium bowl, whisk together the eggs, milk, salt, black pepper, and paprika until well combined.

5. Add the Eggs to the Skillet

  • Reduce the heat to low and pour the egg mixture over the potatoes, onions, and sausage.
  • Stir gently, scrambling the eggs and distributing the ingredients evenly.
  • Cook slowly for 5-7 minutes, stirring occasionally, until the eggs are set but still moist.

6. Serve and Garnish

  • Remove the skillet from heat.
  • Serve hot, garnished with fresh herbs like parsley or chives if desired. Pair with toast or a side salad for a complete meal.
