Ingredients

  • 500 grams (17.63 oz) potatoes, peeled and thinly sliced
  • Vegetable oil, for frying
  • Salt, to taste
  • Ground black pepper, to taste
  • Oregano, to taste
  • 4 large eggs
  • 100 milliliters (3.38 fl oz) milk
  • 1 blue onion, chopped
  • 2 cloves garlic, minced
  • 450 grams (15.87 oz) ground beef
  • 20 milliliters (0.67 fl oz) soy sauce
  • 100 grams (3.52 oz) grated mozzarella cheese

Instructions

1. Prepare the Potatoes

  • Heat a generous amount of vegetable oil in a large skillet over medium heat.
  • Add the sliced potatoes and season them with salt, black pepper, and oregano.
  • Cook the potatoes for about 8-10 minutes, stirring occasionally, until tender and golden brown.
  • Remove the potatoes from the skillet and set them aside.

2. Cook the Ground Beef

  • In the same skillet, add more oil if needed.
  • Sauté the chopped blue onion and minced garlic for 2-3 minutes until fragrant.
  • Add the ground beef, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.
  • Stir in the soy sauce and cook for an additional 2 minutes to infuse the flavor.
  • Remove the beef mixture from the skillet and set it aside.

3. Prepare the Egg Mixture

  • In a mixing bowl, whisk together the eggs and milk until smooth.
  • Add a pinch of salt and ground black pepper, and whisk again to combine.

4. Assemble the Omelet

  • Preheat your oven to 180°C (350°F).
  • In the same skillet (ovenproof), layer the cooked potatoes evenly on the bottom.
  • Spread the ground beef mixture over the potatoes.
  • Pour the egg mixture evenly over the beef and potatoes.
  • Sprinkle the grated mozzarella cheese evenly on top.

5. Bake the Omelet

  • Place the skillet in the preheated oven and bake for 20-25 minutes.
  • Check for doneness when the eggs are fully set and the cheese is golden brown.

6. Serve and Enjoy

  • Let the omelet cool for 5 minutes before slicing into wedges.
  • Serve warm with your favorite sides or toppings, such as fresh herbs or hot sauce.

Notes

  • Slice Potatoes Thinly: This ensures they cook evenly and become tender in the skillet.
  • Customize the Filling: Add sautéed mushrooms, spinach, or bell peppers to the ground beef mixture for extra flavor and nutrition.
  • Cheese Alternatives: Feel free to use cheddar, Gouda, or Parmesan instead of mozzarella.
