Ingredients
For the Crepe Batter:
- 6 large eggs
- 1 teaspoon salt
- 1 tablespoon granulated sugar
- 1 ½ cups all-purpose flour
- 4 cups whole milk
- ¼ cup melted butter or oil
For the Filling and Toppings:
- Nutella (1–2 tablespoons per crepe)
- Toasted almond flakes (for garnish)
- Optional: Whipped cream, powdered sugar, or fresh berries
Instructions
1. Prepare the Crepe Batter:
- In a large bowl, whisk together the eggs, salt, and sugar until smooth.
- Gradually add the flour, whisking constantly to avoid lumps.
- Slowly pour in the milk while whisking to form a smooth, liquid batter.
- Mix in the melted butter or oil. Cover and let the batter rest for 15 minutes.
2. Cook the Crepes:
- Preheat a nonstick pan over medium heat and lightly grease it with butter or oil.
- Pour a ladleful of batter into the pan and tilt it in a circular motion to evenly coat the surface.
- Cook the crepe for 1–2 minutes until the edges lift and the bottom is golden brown. Flip the crepe and cook the other side for 30 seconds to 1 minute.
- Repeat with the remaining batter, stacking the cooked crepes on a plate.
3. Add the Nutella Filling:
- Spread a generous layer of Nutella over the surface of each warm crepe.
- Fold the crepe in half, then fold it again into a triangle, or roll it into a cylinder.
4. Garnish and Serve:
- Sprinkle toasted almond flakes on top for crunch.
- Add optional toppings like whipped cream, powdered sugar, or fresh berries.
- Serve immediately and enjoy!
Notes
- Letting the batter rest helps the gluten relax, creating softer crepes.
- Use a thin spatula for flipping to prevent tearing.
- Leftover batter can be refrigerated for up to 24 hours.
- Store leftover crepes with parchment paper between them in an airtight container in the fridge for up to 3 days.
