Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 packet (2 1/4 teaspoons) instant yeast
  • 3/4 cup warm water (about 110°F)
  • 2 tablespoons olive oil
  • 1 cup marinara sauce
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup sliced pepperoni
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1 egg (for egg wash)

Instructions

  1. In a large bowl, combine the flour, salt, sugar, and instant yeast. Mix well.
  2. Gradually add the warm water and olive oil to the dry ingredients. Stir until a dough forms.
  3. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, cover with a clean towel, and let it rise in a warm place for about 1 hour or until doubled in size.
  5. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  6. Once the dough has risen, punch it down and roll it out on a floured surface to about 1/4 inch thick.
  7. Cut the dough into 4 equal squares.
  8. On one half of each square, spread about 2 tablespoons of marinara sauce, then sprinkle with mozzarella cheese, pepperoni, and Parmesan cheese.
  9. Sprinkle Italian seasoning over the toppings.
  10. Fold the other half of the dough over the filling and press the edges to seal. Use a fork to crimp the edges for a decorative touch.
  11. Beat the egg and brush it over the tops of the pizza pockets for a golden finish.
  12. Bake in the preheated oven for 15-20 minutes or until golden brown.
  13. Allow to cool slightly before serving.
