A delicious and refreshing Honey Mustard Chicken Salad that combines tender chicken with a sweet and tangy dressing, perfect for a light meal or a picnic.
Ingredients
- 2 cups cooked chicken breast, shredded or diced
- 1/2 cup celery, finely chopped
- 1/2 cup red grapes, halved
- 1/4 cup red onion, finely chopped
- 1/4 cup slivered almonds (optional)
- 1/2 cup mayonnaise
- 1/4 cup honey
- 1/4 cup Dijon mustard
- 1 tablespoon apple cider vinegar
- Salt and pepper to taste
- Mixed greens for serving
Instructions
- In a large bowl, combine the cooked chicken, celery, red grapes, red onion, and slivered almonds if using.
- In a separate small bowl, whisk together the mayonnaise, honey, Dijon mustard, apple cider vinegar, salt, and pepper until smooth.
- Pour the honey mustard dressing over the chicken mixture and stir until everything is well coated.
- Chill the salad in the refrigerator for at least 30 minutes to allow the flavors to meld.
- Serve the chicken salad over a bed of mixed greens.
Notes
- For a lighter version, substitute Greek yogurt for half of the mayonnaise.
