Ingredients

  • 2 cups cooked chicken breast, shredded or diced
  • 1/2 cup celery, finely chopped
  • 1/2 cup red grapes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup slivered almonds (optional)
  • 1/2 cup mayonnaise
  • 1/4 cup honey
  • 1/4 cup Dijon mustard
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste
  • Mixed greens for serving

Instructions

  1. In a large bowl, combine the cooked chicken, celery, red grapes, red onion, and slivered almonds if using.
  2. In a separate small bowl, whisk together the mayonnaise, honey, Dijon mustard, apple cider vinegar, salt, and pepper until smooth.
  3. Pour the honey mustard dressing over the chicken mixture and stir until everything is well coated.
  4. Chill the salad in the refrigerator for at least 30 minutes to allow the flavors to meld.
