Ingredients

  • 2 large chicken breasts (about 1 pound total)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/2 cup crumbled feta cheese
  • 1/4 cup honey
  • 1 teaspoon red pepper flakes (adjust to taste)
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the chicken breasts dry with paper towels and season both sides with salt and black pepper.
  3. In a large oven-safe skillet, heat the olive oil over medium-high heat. Add the chicken breasts and sear for about 5 minutes on each side, or until golden brown.
  4. While the chicken is cooking, in a small bowl, mix together the honey, red pepper flakes, and lemon juice.
