Huli Huli Chicken is a delicious grilled chicken recipe marinated in a sweet and savory sauce made with soy sauce, pineapple juice, and spices.
Ingredients
- 2 pounds bone-in, skin-on chicken thighs
- 1 cup soy sauce
- 1 cup pineapple juice
- 1/2 cup brown sugar
- 1/4 cup ketchup
- 1/4 cup rice vinegar
- 1 tablespoon grated fresh ginger
- 4 cloves garlic, minced
- 1 teaspoon sesame oil
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 2 green onions, sliced (for garnish)
- Sesame seeds (for garnish)
Instructions
- In a large bowl, whisk together the soy sauce, pineapple juice, brown sugar, ketchup, rice vinegar, ginger, garlic, sesame oil, black pepper, and red pepper flakes until well combined.
- Place the chicken thighs in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring all pieces are well coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, or overnight for best flavor.
- Preheat your grill to medium-high heat. Remove the chicken from the marinade, allowing excess marinade to drip off. Discard the marinade.
- Grill the chicken thighs skin-side down for about 6-8 minutes, then flip and grill for an additional 6-8 minutes or until the internal temperature reaches 165°F.
- Remove the chicken from the grill and let it rest for 5 minutes.
- Garnish with sliced green onions and sesame seeds before serving.
Notes
- For a smoky flavor, add a few drops of liquid smoke to the marinade.
- For a lighter option, substitute skinless chicken breasts and reduce grilling time accordingly.
