Description

Huli Huli Chicken is a delicious grilled chicken recipe marinated in a sweet and savory sauce made with soy sauce, pineapple juice, and spices.


Ingredients

  • 2 pounds bone-in, skin-on chicken thighs
  • 1 cup soy sauce
  • 1 cup pineapple juice
  • 1/2 cup brown sugar
  • 1/4 cup ketchup
  • 1/4 cup rice vinegar
  • 1 tablespoon grated fresh ginger
  • 4 cloves garlic, minced
  • 1 teaspoon sesame oil
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 green onions, sliced (for garnish)
  • Sesame seeds (for garnish)

Instructions

  1. In a large bowl, whisk together the soy sauce, pineapple juice, brown sugar, ketchup, rice vinegar, ginger, garlic, sesame oil, black pepper, and red pepper flakes until well combined.
  2. Place the chicken thighs in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring all pieces are well coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, or overnight for best flavor.
  3. Preheat your grill to medium-high heat. Remove the chicken from the marinade, allowing excess marinade to drip off. Discard the marinade.
  4. Grill the chicken thighs skin-side down for about 6-8 minutes, then flip and grill for an additional 6-8 minutes or until the internal temperature reaches 165°F.
  5. Remove the chicken from the grill and let it rest for 5 minutes.
  6. Garnish with sliced green onions and sesame seeds before serving.
