Ingredients
- Chicken thighs (4-6 pieces)
- 4–5 potatoes, peeled and cut into pieces
- 1 bell pepper, sliced
- 1 zucchini, sliced
- 2 tablespoons honey
- 150 ml chicken broth
- Olive oil (as needed)
- Butter (small amount)
- Salt, to taste
- Black pepper, to taste
- Paprika, to taste
- Fresh dill, chopped (for garnish)
Instructions
1. Prepare the Chicken
- Preheat your oven to 200°C (400°F).
- Pat the chicken thighs dry and season both sides generously with salt, black pepper, and paprika.
- Heat a skillet over medium-high heat and add a small amount of olive oil and butter.
- Sear the chicken thighs for 3-4 minutes per side until golden brown. Remove and set aside.
2. Prepare the Vegetables
- Chop the potatoes, bell pepper, and zucchini into bite-sized pieces.
- Using the same skillet, add a bit more olive oil if needed. Sauté the vegetables for about 5 minutes, stirring occasionally, until they begin to soften.
3. Combine and Bake
- Push the sautéed vegetables to the sides of the skillet, making space in the center for the chicken thighs.
- Place the chicken thighs back into the skillet. Drizzle the honey over the chicken.
- Pour the chicken broth around the chicken and vegetables, ensuring the skillet doesn’t dry out while baking.
- Transfer the skillet to the preheated oven and bake for 30-35 minutes, or until the chicken is cooked through (internal temperature of 75°C/165°F) and the vegetables are tender.
4. Garnish and Serve
- Remove the skillet from the oven and allow it to rest for 5 minutes.
- Garnish the chicken and vegetables with freshly chopped dill for a burst of flavor and color.
- Serve warm and enjoy alongside crusty bread or a fresh side salad.
