Ingredients

For the Dough:

  • 1 egg
  • 200 ml milk
  • 50 g yogurt
  • 100 ml oil
  • 10 g baking powder
  • 480 g all-purpose flour
  • 8 g salt

To Grease the Dough:

  • 100 g butter, melted
  • 100 ml oil

For the Filling:

  • Feta cheese
  • Curd cheese

For the Topping:

  • 1 egg yolk
  • Black cumin seeds

Instructions

  1. Prepare the Dough: In a large mixing bowl, whisk together the egg, milk, yogurt, and 100 ml of oil until smooth. Add the baking powder, flour, and salt to the wet ingredients. Mix until a dough forms. Knead the dough on a lightly floured surface for 5–7 minutes, or until smooth and elastic.
  2. Rest the Dough: Place the dough back in the mixing bowl, cover with a clean kitchen towel, and let it rest for 15–20 minutes.
  3. Prepare the Filling: In a small bowl, combine feta cheese and curd cheese. Mix well and set aside.
  4. Shape the Bread: After resting, divide the dough into 10–12 equal pieces and roll each into a ball. Flatten each dough ball into a disc. Brush the surface with the melted butter and oil mixture. Place a spoonful of cheese filling in the center of the disc. Fold the edges over the filling to seal, then reshape into a ball.
  5. Preheat the Oven: Preheat your oven to 180°C (350°F). Line a baking sheet with parchment paper.
  6. Prepare for Baking: Arrange the filled dough balls on the prepared baking sheet, leaving some space between them. Brush the tops with egg yolk and sprinkle with black cumin seeds.
  7. Bake: Bake in the preheated oven for 25–30 minutes, or until the tops are golden brown and the bread is cooked through.
  8. Cool and Serve: Allow the bread to cool on a wire rack for a few minutes before serving. Enjoy warm or at room temperature.
