Description

This quick and easy recipe for irresistible cracker toffee cookies is a perfect blend of sweet, salty, and chocolatey goodness. It’s a favorite for holiday gatherings, edible gifts, or simply enjoying as a snack. With just five ingredients and minimal effort, you can create a treat that everyone will love!

Ingredients

  • 30 saltine crackers
  • 1 cup unsalted butter
  • 1 cup light brown sugar
  • 1 1/2 cups semi-sweet chocolate chips
  • 2 tablespoons holiday sprinkles (optional)

Instructions

  • Preheat the Oven
Preheat your oven to 350°F (175°C). Line a baking sheet with aluminum foil, ensuring it covers the edges for easy cleanup, and lightly grease it.

  • Arrange the Crackers
Lay the saltine crackers in a single layer on the prepared baking sheet, making sure there are no gaps.

  • Make the Toffee

    • In a medium saucepan, melt the unsalted butter over medium heat.
    • Add the light brown sugar and stir until combined.
    • Bring the mixture to a boil and let it cook for 3–4 minutes, stirring occasionally, until it forms a smooth, bubbling toffee.
  • Pour Over the Crackers
Pour the hot toffee evenly over the crackers, spreading it quickly with a spatula to cover them all.

  • Bake the Toffee Layer
Place the baking sheet in the oven and bake for 5 minutes. This allows the toffee to soak into the crackers and set slightly.

  • Add and Spread the Chocolate

    • Remove the pan from the oven and immediately sprinkle the semi-sweet chocolate chips over the hot toffee.
    • Let the chocolate sit for 1–2 minutes to melt, then use a spatula to spread it evenly over the toffee layer.
  • Decorate and Set

    • Sprinkle holiday sprinkles or other toppings over the melted chocolate for a festive touch.
    • Allow the toffee to cool at room temperature for 30 minutes, then transfer it to the refrigerator to set for at least 1 hour.
  • Break and Serve

    • Once set, remove the toffee from the pan and peel away the foil.
    • Break the toffee into irregular pieces and serve.

Notes

  • For best results, work quickly with the toffee and chocolate layers to ensure they spread evenly.
  • Store in an airtight container at room temperature for up to 1 week, or refrigerate for extended freshness.
  • Cracker toffee cookies can be frozen for up to 3 months. Let them thaw at room temperature before serving.
