Description

Soft, fluffy, and bursting with fresh apple flavor, these Irresistible Soft Apple Cookies are a must-try treat. With a hint of cinnamon in the icing sugar, they’re perfect for tea time, holiday gatherings, or a sweet snack on a cozy day.

Ingredients

  • 2 eggs (room temperature)
  • 100g (½ cup or 3.5 oz) sugar
  • A pinch of salt
  • 100g (3.5 oz) butter, softened
  • 320340g (2¼-2½ cups or about 11 oz) plain flour
  • 14g (3 teaspoons) baking powder
  • 2 apples, peeled and grated
  • Icing sugar for dusting
  • Optional: Cinnamon to mix with icing sugar for extra flavor

Instructions

  1. Prepare the Wet Ingredients:

    • In a large mixing bowl, beat the eggs with sugar and a pinch of salt until the mixture is light, fluffy, and pale in color.
    • Add softened butter and continue to mix until creamy and well combined.
  2. Incorporate the Dry Ingredients:

    • Sift the plain flour and baking powder in a separate bowl.
    • Gradually add the dry ingredients to the wet mixture, stirring until a soft dough forms. If the dough feels sticky, add more flour as needed.
  3. Add the Apples:

    • Gently fold in the grated apples, ensuring they are evenly distributed throughout the dough.
  4. Shape the Cookies:

    • Preheat your oven to 180°C (350°F). Line a baking sheet with parchment paper.
    • Using a spoon or your hands, shape the dough into small balls about the size of a walnut. Place them on the baking sheet, spacing them about 2 inches apart.
  5. Bake the Cookies:

    • Bake for 12-15 minutes, or until the edges turn golden brown and the centers are set.
    • Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring to a wire rack.
  6. Dust with Icing Sugar:

    • Once completely cooled, dust the cookies generously with icing sugar.
    • For extra warmth and flavor, mix cinnamon into the icing sugar before dusting.

Notes

  • Apple Variety: Use firm apples like Granny Smith or Honeycrisp for the best results.
  • Chilling Tip: If your dough is too soft, refrigerate it for 10-15 minutes before shaping.
  • Storage: Store cookies in an airtight container for up to 3 days or freeze for up to 3 months.
  • Customization: Add nuts, raisins, or a pinch of nutmeg for a twist on this classic recipe.
