Ingredients

For the Chicken Salad:

  • 2 cups rotisserie chicken, shredded
  • ¼ lb. salami or soppressata, diced
  • ¼ lb. pepperoni, diced
  • ¼ cup provolone cheese, diced
  • ¼ cup crumbled feta cheese
  • ⅔ cup diced grape tomatoes
  • ⅓ cup mild banana peppers, chopped
  • ½ red onion, thinly sliced or diced

For the Grinder Dressing:

  • ½ cup mayonnaise
  • ¼ cup grated parmesan cheese
  • 3 tbsp red wine vinegar
  • 12 tbsp banana pepper juice (to taste)
  • 1 tsp oregano
  • 1 tsp garlic powder
  • Freshly cracked black pepper
  • Salt to taste (about ¼ tsp)

Instructions

  1. Prepare the Dressing:
    • In a bowl, whisk together mayonnaise, parmesan cheese, red wine vinegar, banana pepper juice, oregano, garlic powder, salt, and black pepper until smooth.
  2. Combine the Ingredients:
    • In a large mixing bowl, add the shredded chicken, diced meats, red onion, tomatoes, banana peppers, provolone, and feta.
  3. Coat with Dressing:
    • Pour most of the dressing over the salad and mix well, adding the rest if needed to fully coat the ingredients.
  4. Serve & Enjoy:
    • Serve with crackers, over a bed of greens, in lettuce wraps, or as a sandwich filling.

Notes

  • Store leftovers in an airtight container in the fridge for up to 4 days.
  • Adjust spice level by adding crushed red pepper flakes or extra banana peppers.
  • Swap mayo for Greek yogurt for a lighter version.
  • Use crispy prosciutto or turkey instead of pepperoni for a variation.
