Description

 Italian Love Cake is a layered masterpiece of chocolate cake, creamy ricotta, and a light chocolate pudding frosting. Ingredients

For the Ricotta Layer:

For the Chocolate Cake Layer:

  • 1 box (15.25 ounces) chocolate or Devil’s Food cake mix
  • ½ cup canola or vegetable oil
  • 1 cup water
  • 3 large eggs

For the Chocolate Pudding Frosting:

  • 1 box (5 ounces) instant chocolate pudding mix
  • 3 cups cold milk
  • 1 container (8 ounces) whipped topping, thawed

Instructions

  1. Prepare the Ricotta Layer: In a bowl, mix ricotta, sugar, vanilla extract, and eggs until smooth.
  2. Mix the Cake Batter: Prepare the chocolate cake mix according to package instructions with oil, water, and eggs. Pour into a greased 9×13-inch baking dish.
  3. Create the Signature Layers: Carefully pour the ricotta mixture over the cake batter. Do not stir—layers will switch as it bakes.
  4. Bake & Cool: Bake at 350°F for 60–70 minutes, or until the center is set. Let the cake cool completely before frosting.
  5. Make the Chocolate Pudding Frosting: Whisk pudding mix with cold milk and let it sit for 2-3 minutes to thicken. Gently fold in whipped topping until smooth.
  6. Assemble & Chill: Spread frosting over the cooled cake and refrigerate for at least 4 hours before serving.
