Italian Love Cake is a layered masterpiece of chocolate cake, creamy ricotta, and a light chocolate pudding frosting. Ingredients
For the Ricotta Layer:
- 30 ounces ricotta cheese
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 4 large eggs, room temperature
For the Chocolate Cake Layer:
- 1 box (15.25 ounces) chocolate or Devil’s Food cake mix
- ½ cup canola or vegetable oil
- 1 cup water
- 3 large eggs
For the Chocolate Pudding Frosting:
- 1 box (5 ounces) instant chocolate pudding mix
- 3 cups cold milk
- 1 container (8 ounces) whipped topping, thawed
Instructions
- Prepare the Ricotta Layer: In a bowl, mix ricotta, sugar, vanilla extract, and eggs until smooth.
- Mix the Cake Batter: Prepare the chocolate cake mix according to package instructions with oil, water, and eggs. Pour into a greased 9×13-inch baking dish.
- Create the Signature Layers: Carefully pour the ricotta mixture over the cake batter. Do not stir—layers will switch as it bakes.
- Bake & Cool: Bake at 350°F for 60–70 minutes, or until the center is set. Let the cake cool completely before frosting.
- Make the Chocolate Pudding Frosting: Whisk pudding mix with cold milk and let it sit for 2-3 minutes to thicken. Gently fold in whipped topping until smooth.
- Assemble & Chill: Spread frosting over the cooled cake and refrigerate for at least 4 hours before serving.

- Use Full-Fat Ricotta for Best Texture: It creates a creamier, more indulgent ricotta layer.
