Instructions

  • Prepare the Ingredients
    • Chop the onion, mince the garlic, and cube the chicken breasts.
    • Halve or quarter the cherry tomatoes.
  • Sear the Chicken
    • Melt 2 tablespoons of butter in a large pot over medium-high heat.
    • Add the cubed chicken and sear for about 5 minutes until no longer pink. Remove and set aside.
  • Sauté the Aromatics
    • In the same pot, melt the remaining butter.
    • Add the chopped onion and cook for 3–4 minutes until softened.
    • Stir in minced garlic, dried oregano, and crushed red pepper flakes, cooking for another 2 minutes until fragrant.
  • Build the Sauce
    • Pour in the white wine, scraping the bottom of the pot to deglaze.
    • Add chicken stock, hot sauce, and lemon juice. Stir well and bring to a simmer.
  • Cook the Pasta
    • Add the uncooked linguine to the pot, ensuring it is submerged in the liquid.
    • Cook for about 8 minutes, stirring occasionally, until the pasta is al dente. Add extra chicken stock if the liquid reduces too much.
  • Combine and Finish
    • Return the cooked chicken to the pot, tossing it with the pasta and sauce.
    • Stir in cherry tomatoes and let them soften slightly, about 2 minutes.
  • Garnish and Serve
    • Sprinkle with fresh parsley and grated Parmesan cheese.
