Instructions
- Prepare the Ingredients
- Chop the onion, mince the garlic, and cube the chicken breasts.
- Halve or quarter the cherry tomatoes.
- Sear the Chicken
- Melt 2 tablespoons of butter in a large pot over medium-high heat.
- Add the cubed chicken and sear for about 5 minutes until no longer pink. Remove and set aside.
- Sauté the Aromatics
- In the same pot, melt the remaining butter.
- Add the chopped onion and cook for 3–4 minutes until softened.
- Stir in minced garlic, dried oregano, and crushed red pepper flakes, cooking for another 2 minutes until fragrant.
- Build the Sauce
- Pour in the white wine, scraping the bottom of the pot to deglaze.
- Add chicken stock, hot sauce, and lemon juice. Stir well and bring to a simmer.
- Cook the Pasta
- Add the uncooked linguine to the pot, ensuring it is submerged in the liquid.
- Cook for about 8 minutes, stirring occasionally, until the pasta is al dente. Add extra chicken stock if the liquid reduces too much.
- Combine and Finish
- Return the cooked chicken to the pot, tossing it with the pasta and sauce.
- Stir in cherry tomatoes and let them soften slightly, about 2 minutes.
- Garnish and Serve
- Sprinkle with fresh parsley and grated Parmesan cheese.
