Ingredients

  • 2 pounds boneless, skinless chicken thighs
  • 1 cup fresh peaches, diced (about 2 medium peaches)
  • 1/2 cup diced red onion
  • 1/4 cup fresh cilantro, chopped
  • 12 jalapenos, finely chopped (adjust based on heat preference)
  • 3 tablespoons olive oil
  • 2 tablespoons honey
  • 2 tablespoons lime juice
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • Salt and pepper to taste

Instructions

  1. Preheat your grill or a grill pan over medium-high heat.
  2. In a large bowl, combine the diced peaches, red onion, cilantro, jalapenos, olive oil, honey, lime juice, garlic powder, cumin, salt, and pepper. Mix well to create a marinade.
  3. Add the chicken thighs to the bowl, ensuring they are well coated with the marinade. Cover and let marinate for at least 30 minutes, or up to 2 hours in the refrigerator for more flavor.
  4. Once marinated, remove the chicken from the bowl and discard any remaining marinade.
