Jalapeno Peach Chicken is a flavorful summer dish that combines the sweetness of peaches with the heat of jalapenos, perfect for grilling.
Ingredients
- 2 pounds boneless, skinless chicken thighs
- 1 cup fresh peaches, diced (about 2 medium peaches)
- 1/2 cup diced red onion
- 1/4 cup fresh cilantro, chopped
- 1–2 jalapenos, finely chopped (adjust based on heat preference)
- 3 tablespoons olive oil
- 2 tablespoons honey
- 2 tablespoons lime juice
- 1 teaspoon garlic powder
- 1 teaspoon ground cumin
- Salt and pepper to taste
Instructions
- Preheat your grill or a grill pan over medium-high heat.
- In a large bowl, combine the diced peaches, red onion, cilantro, jalapenos, olive oil, honey, lime juice, garlic powder, cumin, salt, and pepper. Mix well to create a marinade.
- Add the chicken thighs to the bowl, ensuring they are well coated with the marinade. Cover and let marinate for at least 30 minutes, or up to 2 hours in the refrigerator for more flavor.
- Once marinated, remove the chicken from the bowl and discard any remaining marinade.
- Grill the chicken thighs for about 6-7 minutes on each side, or until the internal temperature reaches 165°F.
- Remove the chicken from the grill and let it rest for 5 minutes before slicing.
- Serve the grilled chicken topped with any remaining peach salsa from the marinade bowl.
Notes
- For a smoky flavor, add a teaspoon of smoked paprika to the marinade.
- Substitute the peaches with mango or pineapple for a different fruity twist.
