Ingredients

  • 2 medium Japanese sweet potatoes (about 1 pound), peeled and cut into thin slices
  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 teaspoon baking powder
  • 1 cup cold sparkling water
  • 1/2 teaspoon salt
  • Vegetable oil, for frying
  • Dipping sauce (soy sauce mixed with a splash of rice vinegar and a sprinkle of sesame seeds)

Instructions

  1. Heat about 2 inches of vegetable oil in a deep pot or fryer to 350°F (175°C).
  2. In a large bowl, whisk together the flour, cornstarch, baking powder, and salt.
  3. Gradually add the cold sparkling water to the dry ingredients, mixing gently until just combined. The batter should be lumpy; do not overmix.
  4. Dip the sweet potato slices into the batter, allowing any excess to drip off.
  5. Carefully place the battered sweet potato slices into the hot oil, frying in batches to avoid overcrowding. Fry for about 3-4 minutes or until golden brown and crispy.
  6. Use a slotted spoon to remove the tempura from the oil and place them on a paper towel-lined plate to drain excess oil.
