Description
A refreshing and flavorful Kale Caesar Pasta Salad that combines the classic Caesar flavors with nutritious kale and pasta.
Ingredients
- 8 ounces rotini pasta
- 4 cups chopped kale, stems removed
- 1 cup cherry tomatoes, halved
- 1/2 cup grated Parmesan cheese
- 1/4 cup Caesar dressing
- 1 tablespoon olive oil
- 1/4 teaspoon garlic powder
- Salt and pepper to taste
- 1/4 cup croutons (optional)
Instructions
- Cook the rotini pasta according to package instructions. Drain and rinse under cold water to cool.
- In a large bowl, combine the chopped kale, cherry tomatoes, and cooled pasta.
- In a small bowl, whisk together the Caesar dressing, olive oil, garlic powder, salt, and pepper.
- Pour the dressing over the pasta mixture and toss until everything is well coated.
- Add the grated Parmesan cheese and toss again. If desired, sprinkle croutons on top before serving.
- Chill the salad in the refrigerator for at least 30 minutes to allow the flavors to meld. Serve cold or at room temperature.
Notes
- For added protein, consider mixing in grilled chicken or chickpeas.
- Substitute the kale with spinach or arugula for a different flavor profile.
