Description

A refreshing and flavorful Kale Caesar Pasta Salad that combines the classic Caesar flavors with nutritious kale and pasta.


Ingredients

  • 8 ounces rotini pasta
  • 4 cups chopped kale, stems removed
  • 1 cup cherry tomatoes, halved
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup Caesar dressing
  • 1 tablespoon olive oil
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/4 cup croutons (optional)

Instructions

  1. Cook the rotini pasta according to package instructions. Drain and rinse under cold water to cool.
  2. In a large bowl, combine the chopped kale, cherry tomatoes, and cooled pasta.
  3. In a small bowl, whisk together the Caesar dressing, olive oil, garlic powder, salt, and pepper.
  4. Pour the dressing over the pasta mixture and toss until everything is well coated.
  5. Add the grated Parmesan cheese and toss again. If desired, sprinkle croutons on top before serving.
  6. Chill the salad in the refrigerator for at least 30 minutes to allow the flavors to meld. Serve cold or at room temperature.
