Description
Korean Corn Cheese is a sweet, savory, and ultra-cheesy dish that’s impossible to resist! Made with buttery corn, creamy mayo, and gooey melted mozzarella, this Korean favorite is served sizzling at BBQ restaurants but is just as easy to make at home. Whether you’re enjoying it as a side dish, appetizer, or snack, this indulgent dish is the perfect blend of comfort and flavor.
Ingredients
- 2 (15 oz each) cans corn kernels, drained
- ⅓ cup mayonnaise
- 2 teaspoons granulated sugar
- 3 tablespoons unsalted butter
- 1 cup shredded mozzarella cheese
- 1 green onion, thinly sliced
- Kosher salt and freshly ground black pepper, to taste
Optional Add-Ins
- ½ teaspoon gochugaru (Korean chili flakes) for heat
- ½ cup cooked bacon bits for extra crunch
- ¼ cup diced bell peppers for sweetness
- 2 cloves garlic, minced for extra depth
- ¼ cup chopped onions for added flavor
Instructions
Step 1: Prep the Ingredients
- Drain the corn thoroughly to remove excess moisture.
- Shred the mozzarella cheese if using a block (freshly shredded cheese melts better).
- Thinly slice the green onions for garnish.
Step 2: Cook the Corn Mixture
- Heat a cast-iron skillet or oven-safe pan over medium heat.
- Add butter and let it melt, then stir in the drained corn, mayonnaise, and sugar.
- Season with salt and black pepper to taste.
- Cook for 3–5 minutes, stirring occasionally, until the mixture starts to bubble.
Step 3: Add the Cheese & Broil
- Evenly sprinkle the shredded mozzarella over the top of the corn mixture.
- Transfer the skillet to the oven and broil on low for 2–3 minutes, or until the cheese is golden and bubbly. (Watch closely to prevent burning!)
Step 4: Garnish & Serve
- Remove from the oven and garnish with sliced green onions.
- Serve immediately and enjoy the gooey, cheesy goodness!
Notes
- Fresh or Frozen Corn: You can use fresh corn (cut off the cob) or frozen corn instead of canned. If using frozen, thaw and drain before cooking.
- No Broiler? If your oven doesn’t have a broiler, bake at 450°F (230°C) for 5–10 minutes until the cheese is bubbly. You can also use a kitchen torch to melt and caramelize the cheese.
- Vegetarian-Friendly: Make sure your cheese and mayonnaise are vegetarian-certified, as some brands contain animal-based ingredients.
- Storage & Reheating: Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven at 350°F (175°C) for 10 minutes, on the stovetop over low heat, or in the microwave in 30-second intervals.
