Ingredients

  • 400g chicken breast, thinly sliced
  • 250g pasta
  • 1 carrot, julienned
  • 1 onion, thinly sliced
  • 1 bell pepper, thinly sliced
  • 1 bunch of spring onions, chopped
  • 3 cloves of garlic, minced
  • 45ml sweet chili sauce
  • 45ml soy sauce
  • Salt, to taste
  • Black pepper, to taste
  • Paprika, to taste
  • Vegetable oil, for cooking

Instructions

1. Cook the Pasta

  • Bring a large pot of salted water to a boil.
  • Add the pasta and cook according to package instructions until al dente.
  • Drain and set aside.

2. Prepare the Chicken

  • Season the thinly sliced chicken with salt, black pepper, and paprika.
  • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  • Add the minced garlic and cook for 1 minute until fragrant.
  • Stir in the seasoned chicken and cook for 5-7 minutes until cooked through and lightly browned.

3. Stir Fry the Vegetables

  • In the same skillet, add more vegetable oil if needed.
  • Add the julienned carrot, thinly sliced onion, and bell pepper.
  • Stir fry for 4-5 minutes until the vegetables are tender-crisp.

4. Combine and Flavor

  • Return the cooked chicken to the skillet with the vegetables.
  • Add the cooked pasta, sweet chili sauce, and soy sauce.
  • Toss everything together to coat evenly with the sauce.
  • Cook for an additional 2-3 minutes to blend the flavors.

5. Add Spring Onions and Serve

  • Stir in the chopped spring onions and cook for 1 more minute.
  • Remove the skillet from heat and serve hot, garnished with extra spring onions if desired.

Notes

  • For a spicier kick, add chili flakes or sriracha.
  • You can replace the pasta with rice or noodles for a different base.
  • If you prefer more crunch, don’t overcook the vegetables. Stir fry them just until tender-crisp.
  • Use a wok for even heat distribution and quicker cooking.
