A delightful and fresh toast topped with creamy ricotta, sweet blueberries, and a hint of lemon.
Ingredients
- 2 cups fresh blueberries
- 1 tablespoon honey
- 1 teaspoon lemon zest
- 1 tablespoon lemon juice
- 1 cup ricotta cheese
- 4 slices of whole grain bread
- 2 tablespoons olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- Fresh mint leaves for garnish (optional)
Instructions
- In a small bowl, combine the blueberries, honey, lemon zest, and lemon juice. Gently mash the blueberries with a fork to release some juice and mix well. Set aside to marinate for about 10 minutes.
- While the blueberries are marinating, preheat your oven to 400°F.
- Place the slices of whole grain bread on a baking sheet. Brush each slice with olive oil on both sides and sprinkle with salt and pepper.
- Toast the bread in the preheated oven for about 8-10 minutes, or until golden brown and crispy.
- Once the bread is toasted, remove it from the oven and let it cool slightly.
- Spread a generous layer of ricotta cheese on each slice of toasted bread.
- Top the ricotta with the marinated blueberry mixture, spooning it generously over the cheese.
- Garnish with fresh mint leaves if desired, and serve immediately.
Notes
- For a creamier texture, use whole milk ricotta instead of part-skim.
- You can also substitute the blueberries with strawberries or raspberries for a different flavor.
- For added crunch, sprinkle some chopped nuts, like almonds or walnuts, on top before serving.
