Ingredients

  • 2 cups fresh blueberries
  • 1 tablespoon honey
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 1 cup ricotta cheese
  • 4 slices of whole grain bread
  • 2 tablespoons olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh mint leaves for garnish (optional)

Instructions

  1. In a small bowl, combine the blueberries, honey, lemon zest, and lemon juice. Gently mash the blueberries with a fork to release some juice and mix well. Set aside to marinate for about 10 minutes.
  2. While the blueberries are marinating, preheat your oven to 400°F.
  3. Place the slices of whole grain bread on a baking sheet. Brush each slice with olive oil on both sides and sprinkle with salt and pepper.
  4. Toast the bread in the preheated oven for about 8-10 minutes, or until golden brown and crispy.
  5. Once the bread is toasted, remove it from the oven and let it cool slightly.
  6. Spread a generous layer of ricotta cheese on each slice of toasted bread.
  7. Top the ricotta with the marinated blueberry mixture, spooning it generously over the cheese.
  8. Garnish with fresh mint leaves if desired, and serve immediately.

  • For a creamier texture, use whole milk ricotta instead of part-skim.
