Delightfully easy lemon frosted cookies topped with a zesty glaze, perfect for any occasion.
Ingredients
- 2 ½ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 cup unsalted butter, softened
- 1 ½ cups granulated sugar
- 1 large egg
- 2 teaspoons vanilla extract
- 2 tablespoons lemon zest
- 3 tablespoons fresh lemon juice
- 1 cup powdered sugar
- 1–2 tablespoons fresh lemon juice (for glaze)
- 1 teaspoon lemon zest (for glaze)
Instructions
- Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl, cream the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.
- Beat in the egg, vanilla extract, lemon zest, and lemon juice until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Scoop tablespoon-sized portions of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are lightly golden. Remove from the oven and let cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
- In a small bowl, mix the powdered sugar, 1-2 tablespoons of fresh lemon juice, and lemon zest until smooth. Adjust the consistency with more lemon juice if needed.
- Once the cookies are completely cool, drizzle or spread the glaze over the tops of the cookies. Allow the glaze to set for about 15 minutes before serving.
Notes
- For a fun twist, add poppy seeds to the cookie dough for a lemon-poppy seed flavor.
- For a more intense lemon flavor, increase the lemon zest in the dough and glaze to 1 tablespoon each.
