Description

Ingredients

  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 ½ cups granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 tablespoons lemon zest
  • 3 tablespoons fresh lemon juice
  • 1 cup powdered sugar
  • 12 tablespoons fresh lemon juice (for glaze)
  • 1 teaspoon lemon zest (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, cream the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.
  4. Beat in the egg, vanilla extract, lemon zest, and lemon juice until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Scoop tablespoon-sized portions of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes, or until the edges are lightly golden. Remove from the oven and let cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
  8. In a small bowl, mix the powdered sugar, 1-2 tablespoons of fresh lemon juice, and lemon zest until smooth. Adjust the consistency with more lemon juice if needed.
  9. Once the cookies are completely cool, drizzle or spread the glaze over the tops of the cookies. Allow the glaze to set for about 15 minutes before serving.

Notes

  • For a fun twist, add poppy seeds to the cookie dough for a lemon-poppy seed flavor.
  • For a more intense lemon flavor, increase the lemon zest in the dough and glaze to 1 tablespoon each.
