Description

A delightful and refreshing dessert combining layers of lemon curd, diced mangoes, and passionfruit, topped with whipped cream and ladyfinger cookies.


Ingredients

  • 2 cups lemon curd
  • 2 ripe mangoes, diced
  • 1 cup passionfruit pulp (fresh or canned)
  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 8 ounces ladyfinger cookies
  • 1/4 cup coconut flakes (optional)
  • Fresh mint leaves for garnish (optional)

Instructions

  1. In a medium bowl, whip the heavy cream with the powdered sugar and vanilla extract until soft peaks form. Be careful not to overwhip.
  2. In a large trifle dish or individual serving glasses, layer half of the ladyfinger cookies at the bottom.
  3. Spoon half of the lemon curd over the ladyfingers, followed by half of the diced mangoes and half of the passionfruit pulp.
  4. Spread half of the whipped cream mixture over the fruit layers.
  5. Repeat the layers with the remaining ladyfingers, lemon curd, mangoes, passionfruit, and whipped cream.
  6. If using, sprinkle coconut flakes on top for added texture and flavor.
  7. Chill the trifle in the refrigerator for at least 2 hours before serving to allow the flavors to meld.
  8. Garnish with fresh mint leaves just before serving for a pop of color and freshness.

Notes

  • For a lighter version, substitute half of the heavy cream with Greek yogurt.
