Description
A delightful and refreshing dessert combining layers of lemon curd, diced mangoes, and passionfruit, topped with whipped cream and ladyfinger cookies.
Ingredients
- 2 cups lemon curd
- 2 ripe mangoes, diced
- 1 cup passionfruit pulp (fresh or canned)
- 1 cup heavy whipping cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 8 ounces ladyfinger cookies
- 1/4 cup coconut flakes (optional)
- Fresh mint leaves for garnish (optional)
Instructions
- In a medium bowl, whip the heavy cream with the powdered sugar and vanilla extract until soft peaks form. Be careful not to overwhip.
- In a large trifle dish or individual serving glasses, layer half of the ladyfinger cookies at the bottom.
- Spoon half of the lemon curd over the ladyfingers, followed by half of the diced mangoes and half of the passionfruit pulp.
- Spread half of the whipped cream mixture over the fruit layers.
- Repeat the layers with the remaining ladyfingers, lemon curd, mangoes, passionfruit, and whipped cream.
- If using, sprinkle coconut flakes on top for added texture and flavor.
- Chill the trifle in the refrigerator for at least 2 hours before serving to allow the flavors to meld.
- Garnish with fresh mint leaves just before serving for a pop of color and freshness.
Notes
- For a lighter version, substitute half of the heavy cream with Greek yogurt.
- Add a layer of fresh berries, such as strawberries or blueberries, for extra flavor and color.
