Lemon Posset is a simple yet delicious creamy dessert made with heavy cream, sugar, and fresh lemon juice, perfect for any occasion.
Ingredients
- 2 cups heavy cream
- 1 cup granulated sugar
- 1/2 cup freshly squeezed lemon juice (about 2–3 lemons)
- Zest of 1 lemon
- Pinch of salt
Instructions
- In a medium saucepan, combine the heavy cream, granulated sugar, and a pinch of salt. Heat over medium heat, stirring occasionally, until the sugar has completely dissolved and the mixture begins to simmer. Do not let it boil.
- Once the mixture is simmering, remove it from the heat and stir in the lemon juice and lemon zest. Mix well until fully combined.
- Allow the mixture to cool for about 15 minutes at room temperature.
- Pour the cooled mixture into individual serving cups or ramekins.
- Cover with plastic wrap and refrigerate for at least 4 hours, or until set.
- Serve chilled, garnished with additional lemon zest or fresh berries if desired.
Notes
- For a twist, try substituting lime juice for lemon juice for a key lime posset.
- Add a splash of vanilla extract to the cream mixture for a richer flavor.
