Ingredients

  • 2 cups heavy cream
  • 1 cup granulated sugar
  • 1/2 cup freshly squeezed lemon juice (about 23 lemons)
  • Zest of 1 lemon
  • Pinch of salt

Instructions

  1. In a medium saucepan, combine the heavy cream, granulated sugar, and a pinch of salt. Heat over medium heat, stirring occasionally, until the sugar has completely dissolved and the mixture begins to simmer. Do not let it boil.
  2. Once the mixture is simmering, remove it from the heat and stir in the lemon juice and lemon zest. Mix well until fully combined.
  3. Allow the mixture to cool for about 15 minutes at room temperature.
  4. Pour the cooled mixture into individual serving cups or ramekins.
  5. Cover with plastic wrap and refrigerate for at least 4 hours, or until set.
